Spaghetti in Mushroom and Walnut Sauce

Yes, #healthyfood can be fancy too!

Presenting my #spaghetti in mushrooms and walnut sauce- lunch is fancy today because I am working from home, so had to use the perk. But for me, fancy doesn’t mean unhealthy or indulgent. This recipe is very easy to put together and you will not miss the meat. To make a vegan version simply skip the wee bit of Parmesan cheese sprinkled at the very end. Use #wholewheat spaghetti to make it even more healthy.


(Serves 1)

Ingredients:


50 g spaghetti, boiled till al-dente

1 tbsp olive oil

250 g button mushrooms, sliced or quartered

3 walnuts smashed into pieces

a couple of cloves of minced garlic

about 2 tsp grated Parmesan

1 small twig of fresh rosemary or a small pinch of dried rosemary herb

Salt and pepper to season


This protein and fibre loaded dish is perfect for a quick light lunch. Plus it is a breeze to put together!

Instructions:


- Heat the olive oil in a large pan on a low heat, add the garlic and saute till just fragrant.

- Turn the heat up to medium and add the mushrooms to the pan ensuring that its not crowded so that the mushrooms roast rather than sweat. Once the mushrooms are slightly brown, toss in the walnuts, rosemary and seasonings. Add a couple of teaspoons of pasta water or water to the mushrooms mix, next add the spaghetti in and toss till the mushrooms and walnuts are well mixed in the spaghetti.

- Serve hot in a plate and garnish with grated parmesan to finish the dish.
